Rum Balls
1 cup crushed vanilla wafers
1 cup confectioner’s sugar
1 cup chopped pecans
2 T cocoa (I add a little more)
2 T light corn syrup
1/4 c dark rum
1/4 fine granulated sugar
Combine first four ingredients. Add syrup and rum and stir together. It is gooey. Shape into 1-inch balls and roll in the granulated sugar or additional ground pecans. Let set a bit on waxed paper, then box. They have a real punch at first, then mellow.
